4 Ways to Repair Your Commercial Deep Fryer Quickly and Easily
When your fryer goes down you'll probably want to get it running again quickly. Fortunately, commercial fryers are usually easy to fix, and parts are also quite easy to find. There are four parts fryer that most commonly causes a fryer to fail:
1. Hi-Limit
2. Thermopile
3. Combination gas safety valve
4. Thermostat
BE sure to turn off power and / or gas FIRST!
How to determine the problem:
1. If the pilot light not stay lit, one of three things failed. First, make sure the hi-limit is the one guilty of wire off and connect it with the other wire. Do what you always do and pilot light. If the pilot stays lit, the upper limit is bad and needs replacing.
To replace the hi-limit, you first need to empty the oil tank. This must be done because the bulb of detection for the hi-limit goes into the side of the tank. There is a large nut on the side of the tank and a small nut inside the big nut, drop and pull these out. Now you can remove the limit of high defective. Reverse the procedure to install the hi new term. Always the biggest screw nut on the first tank and then the lower nut. Light the pilot and his unit should be working.
2. If the pilot does not stay lit, then the thermopile is most likely the culprit. One end is attached to the pilot and the other is connected to the gas valve. Remove the thermopile of both places and replace. Light the pilot, and if he stays on you're good to go. Also, remember to connect the wireless hi-limit.
3. If the pilot does not stay lit, then the only thing left is the combination of safety valve of gas. To replace the valve combination, you must have a pair of pipe. This is the most difficult to change, due to limited space. Remember to install the new gas valve in the same direction and replace all the connections.
4. If the pilot is lit, but the pan does not work, the thermostat may be defective. Only three things can happen, so the burner does not light when turned on, although the pilot is lit, the oil will not get hot enough or when the oil reaches the temperature will not shut down. In both cases, the thermostat must be replaced.
If running wild (not off) the oil will overheat causing the hi-limit for the trip out and shut everything out. Redefining the hi-limit and relight the pilot and he stays on, then you know that the thermostat is not good. To replace the thermostat follow the same instructions for replacing the hi-limit.

Deep Fryer - Deep Fried Pickles and Jalapenos
As an expert grill and barbecue fanatic, I wanted to come up with something really good to serve as an appetizer, so I searched and found my brain. Deep Fried Pickles. That's right, deep fried pickles. I also added mushrooms and jalapeno peppers to the mix as well, and the man came out great! I'll share my secrets with you to spread the love around in all their meetings. It is very easy to do, but it takes a little time to get it right - without cutting corners on this one babies food companion. I had these first, and only the State Fair of Texas many years ago, and the memory just bubbled from the depths of my brain that I was thinking what to try ... and was a good thing!
Let's start, ok? (Do not worry - I'll take you through the entire process step-by-step).
First, combine 2 eggs and 2 cups of milk in a large bowl along with 1 teaspoon Worcestershire sauce, a tbsp cracked black pepper and a teaspoon of nutmeg. Beat vigorously (I can not believe I just wrote that) for about 30 seconds and set aside. That was not so bad really.
Then take a good size Tupperware container or a gallon plastic bag and add the following:
3 cups flour
1 cup cornmeal
2 tablespoons dry mustard
2 tablespoons oregano
Season 2 TBSP Salt
White Pepper 1 TBSP
1 TBSP Red Pepper
1 TBSP garlic powder
1 TBSP THYME
Now place the lid, or close the bag and shake vigorously.
Keep stirring - and deliver it from time to time. Keep stirring and turning for about a minute. You get to see all the spices and seasoning mix with flour. This is what you want.
* Note: Make sure the lid is on, or the bag is firmly closed ... I learned this the hard way! *
Reserve.
You want to have dill pickle chips, despite what the blogosphere says ... Dill Pickle Chips! Wash the peppers and mushrooms very well, and then Pat completely dry with a paper towel, along with pickle chips. Deseed jalapenos and cut into slices about 1 / 4 inch thick book with pickles and mushrooms (White Onion Rings would work as well, again if you want!). After all the main ingredients are completely dry ... throw them in the washing of eggs. Let them set for about five minutes to absorb the wash.
What do you do now, and he will be confused at first, is to take a slotted spoon and remove the pickles / mushrooms / peppers wash eggs and move them to the dry material in plastic bag or Tupperware container. .. one at a time. Do not rush this process, you'll have a goopy, sloppy mess on your hands if you will.
Now, gently stir and turn the bag / container until the dry mix covers all vegetarians. That's it ... stir gently and in turn, shake and shift. This may take a few minutes, but make sure the veggies are coated. This is why you have to make sure that is not slop the egg wash on dry mix ... we'll do it again, and if the egg wash is abandoned in the dry mix ... you have to dry corn flour in your hand! Do not drip the egg wash in the dry mix.
Now, vegetarians transfer back to the wash - Do not pour the dry mix in it! Take them out one at a time and gently place them back into the egg wash. Once all the pickles / peppers / mushrooms are back in the egg wash ... take the skimmer and move them into the bag of dry mix / container again. Stir again. Turn again for about a minute.
That was not so hard was it? Messy, maybe, but that will come with time ... or thyme.
Okay - here's where it gets strange but true: Take all the vegetarians out of the dry mixture and place them one at a time, on a cookie sheet. Yep. A cookie sheet. Try to space them out so they will not stay together. Now place the cookie sheet of kindness pickled pepper mushroom in the freezer for 30 minutes. Yes, the freezer - for 30 minutes. Do it.
Heat a cast iron skillet or fryer to 375 degrees (and I would recommend Peanut Oil). As the temperature is up, take the veggies out of the freezer and place them in hot oil ... not all at the same time, however. Pickles and Peppers first and not all of them - you'll need enough of them to fill the fryer or frying pan, but not enough that the oil spills over the sides of the appliance to cook! Take your time. they will be fine. Mushrooms should be the last and by themselves.
Cook until the dough becomes Golden Brown - 4 minutes, but we need to eyeball and see for yourself. One tip to note is that if the outside of any fried food seems very dark while it is still in the oil ... it burned! Pull it when it comes to 2 shades of golden brown lighter than you want, and they continue to cook for a while after removing it.
Next Tip: Use newspaper (pages in black and white only) to the bottom line the pot or bowl you're going to put in the deep-fried. The newspaper will absorb much more fat than paper towels, and will not become mush and keep the food!

Deep Fryer - How to Deep Fry a Turkey
You have an extra five gallons of peanut oil sitting around the house? Why not use it to fry a turkey?
Deep fried turkey is moist and delicious and not oily. The skin instantly and Sears focuses on the turkey juices to the juiciest turkey you already have. It cooks quickly to 350 degrees for about 3 ? minutes per pound. This is a turkey of 12 pounds in less than 40 minutes. You still have time to cook two turkeys, if you want. No more waking up at dawn to put the turkey in the oven. Frying a turkey will also free up oven space for side dishes. If your oven space is limited, think of how much room you have, without a turkey in there.
What you need to fry a turkey:
Deep Fryer - You can buy all the configuration of a kit or you can buy everything separately. Make sure your pot is about 40-60 liters. The burner should be large enough to hold this pot securely. Most burners use a propane tank as a fuel source and are not included in the kits.
Candy Thermometer - having an accurate thermometer is important to ensure that the turkey cooks properly and to avoid a fire. Candy thermometers are long and usually have a clip so you can attach them to the side of the vessel. Most kits include a Deep Fryer thermometer.
Meat Thermometer - After cooking your bird for 3 1 / 2 minutes per pound it will be done. If you have trouble keeping the oil temperature constant, then you may need a meat thermometer. The turkey is done when the internal temperature reaches 160 degrees.

How to prepare for its first deep frying:
Choose a turkey no larger than 12 pounds. If this is not enough to feed your guests, then get two turkeys. Even if you have a pot large enough to cook a larger turkey remember that you will have to lift it over a pan of hot oil. A turkey will cook 12 pounds in less than 40 minutes to cook two (24 pounds of turkey) can still be done in well under two hours and think of all the leftovers you have.
Remove the giblets and neck from inside the turkey. Remove any pop-up timers or links plastic leg. The feet should be tied with butchers twine to not touch the side of the pot while cooking. Do not stuff your turkey.
Thaw the turkey in the refrigerator for several days before cooking. Do not thaw a turkey out of the fridge, this is a great way to grow bacteria.
Stuffing and gravy - When frying a turkey stuffing should be done outside the bird. Also plan alternative ways to make gravy. You do not have access to turkey fat, as you would for roasting a turkey. Frying up the kids and neck in a pan is a solution or to save a bit of chicken fat in a meal before a few days before Thanksgiving. And remember that a fried turkey requires less sauce, why not dry like the roast turkey in the oven, though this does not help your mashed potatoes.
Caution Deep frying a turkey is dangerous and should be used properly:
The fryer Turkey has to be out on a flat surface. Do not deep fry a turkey in a garage or a garage. Always keep a fire extinguisher (rated for grease fires) nearby.
